Spicy Vietnamese Jumbo Shrimp


– 1 tbs oil
– 3 cloves garlic, minced
– 1 red chili, seeded and minced
– 1 tsp crushed black peppercorns
– 1 1/2 tbs sugar
– 3 tbs fish sauce
– 1/2 cup water
– 6 fresh jumbo shrimp


Heat oil in a wok over medium heat and stir-fry garlic and chili for about 2 minutes. Add peppercorns, sugar, fish sauce, and water. Mix well, then add shrimp and simmer for about 9 minutes, uncovered, basting frequently. Transfer shrimp to a serving platter and set aside.
Reduce heat to low and continue to simmer sauce for about 4 minutes. Remove from heat and pour sauce over shrimp. Serve hot.
